Crostini with Truffle



G 100 White truffle
N 8 toasted bread slices
½ L vegetable broth
G 30 butter
G 30 flour
G 50 grated Pecorino cheese
G 50 grated Parmesan cheese
Zest of lemon to taste
Salt and pepper to taste


Use a saucepan to prepare a blonde roux with butter and flour, add hot vegetable broth, mix and thicken, season and add grated lemon zest (use a microplane).

Toast the slices of bread in oven or grill them.

Arrange the warm toasted bread on a serving dish, spread the creamy mixture over each slice. Shave White Truffle in front of client at the last moment. Serve immediately.
